This year for our Christmas Open House and New Year's Eve I did four cream cheese spreads. And I went with the 12 oz tubs of whipped cream cheese to make things a little easier to mix up. However, it took just as much time mix everything together, so I'll use the 8 oz. bricks next time, as they are cheaper!
The following recipes are adjusted for 8 oz. bricks of cream cheese. Add any liquid ingredients first, and stir well to soften the cheese. Then mix in your other ingredients, one at a time, mixing well after each addition. It's best to mix these up the day before (no less than 6 hours ahead) to allow the flavors to blend and strength
